Abstract:
The main purpose of this project is determination of microbiological quality characteristics of organic fruits and vegetables for food safety. For this purpose, total mesophilic aerobic bacteria, yeast and mold, fecal coliform, Enterobacteriaceae, E.coli, E.coli O157:H7, L.monocytogenes and Salmonella spp. analyzes were made in the products collected from the organic neighborhood bazaar in Izmir and the microbiological quality of these products was determined. Results were form in CFU/g for all counts. Aerobic mesophilic bacteria counts of all fresh organic produce were found between 1.1x102 CFU/g and 4x106 CFU/g. The smallest aerobic mesophilic bacteria counts found in organic lettuce. Coliform counts between 3x102 CFU/g and 5.3x105. In spinach sample, Escherichia coli O157:H7 was found. Organic fresh produce samples did not have any L. monocytogenes and Salmonella spp.
